Take advantage of buying meat in bulk and marinate a bunch at once.
Features
As far as marinades go this is my favorite! If you buy the Tri Tips at Costco they usually have 5 to 6 steaks per container.
Whisk together:
1/3 cup Extra Virgin Olive Oil (EVOO)
1/3 cup soy sauce
1 tbsp fresh rosemary, chopped
1 tbsp fresh thyme, chopped
1 tbsp tomato paste
1 tbsp brown sugar
1 tsp black pepper
Step 1
This amount is good for 2 small tri tip roasts. Put in Ziploc bag and squoosh it around so the meat is coated on all sides. Squeeze out air and seal bag. Refrigerate 4 hours or overnight or freeze meat in the marinade. If you freeze it, be sure the meat is flat—if you have 2 tri tips in there, they should be laying side by side in the bag, not on top of each other. Thaw in refrigerator overnight and they will be ready to grill by late afternoon. I have found it best not to have more than 2 tri tip roasts per Ziploc bag or it takes too long to defrost also the meat doesn't get coated with the marinade as well. As it thaws, turn the bag over once or twice to redistribute the marinade.
Step 2
Grill on high 4-5 minutes and then flip and grill additional 4-5 minutes. Should be really brown on both sides. Turn grill to med and grill until meat reaches 140 degrees. Remove from grill. Cover with foil and let rest 15 minutes.
You can also freeze the marinade so I always start with 1 cup each of the EVOO and soy.
