This is a great meal when you are short on time. The meat can be browned the night before.

In case you haven't sensed it already we use a lot of garlic in our house! It's so good for you and it's delicious. Buy boneless round steak (I use about 3 lbs for 2 adults, 2 kids); you could buy eye of round and slice then cut slices into strips. depends on which form of round steak is cheapest--it all comes from the same place but they "market" it and the price varies a lot depending on the fanciness of the name or how much they have to get rid of.
Ingredients:
3 - 4 lbs Eye of Round Roast
1 Head of Garlic
Extra Virgin Olive Oil (EVOO)
Salt
Black Pepper
Step 1
Cut off all visible fat off roast. You want it to be 1/2" thick maximum. Cut in thin strips about 1/4"
Step 2
Brown strips in batches in small amount of EVOO. If you put too much meat in pan at once it steams and doesn't brown. Season meat with salt and pepper as you are cooking it. Chop garlic while meat is browning.
Step 3
Once all meat is browned, put in Crockpot and add the chopped garlic. Add water to halfway point in crock pot.
Step 4
Cook for 8 hours on low. Check from time to time to make sure the water hasn't cooked away and add more water if needed.
You can thicken by reducing it on the stove. I leave it thin and serve it with pasta that will hold the sauce. Egg noodles are also a good option.
