Deliciousness in a pan!
Features
Crash Hot Potatoes are so easy to make and they are so good! I love the crispy edges and flaky middles. This is a dish you should make when you can have the windows open.
New potatoes or other small round potatoes
Olive oil
Kosher salt
Black pepper
Several cloves of garlic(I use at least 8, but I love garlic)
Step 1
Bring pot of salted water to a boil. Add in as many potatoes as you wish to make and cook them till they are fork tender. Chop garlic while potatoes are cooking.
Step 2
On a sheet pan, generously drizzle with olive oil. Place tender potatoes on the cookie sheet leaving plenty of room between each potato.
Step 3
With a potato masher, gently press down each potato until it slightly mashes, rotate the potato masher 90 degrees and mash again. Brush the tops of the potatoes generously with more olive oil.
Step 4
Sprinkle potatoes with kosher salt, fresh ground black pepper and chopped garlic.
Step 1
Bake in a 450 degree oven for 20 – 25 minutes until golden brown.
Enjoy this amazing side, although I could eat the whole pan as a meal.
